In a medium sauce pan, bring water to a boil. Add tapioca pearls and stir. Turn to low heat and continue to cook for 5 minutes. Strain tapioca pearls and cover with Honey Simple Syrup. Let cool for at least 15 minutes. Meanwhile, in a separate pan, bring water, tea and mint leaves to a boil. Once cooled, stir in lemon juice, honey and vodka. Adjust sweetness to taste! Add pre-cooked Tapioca balls to the bottom of a tall glass and pour tea mixture over ice. Garnish with a sprig of mint. Enjoy!
