Mint-Lemonade Bubble Tea





So as you might be able to tell, we're just a little obsessed with bubble tea right now!  We made a super tasty Strawberry Banana version last week! Our latest version is perfect for a warm summer day.  And the best part about these drinks is that they come with a snack!  Cheers!

Mint-Lemonade Bubble Tea
2 cups water
1 tea bag
1 ounce lemon juice
1 ounce Honey Simple Syrup (minus the lavender!)
1-2 ounces vodka (Optional)
1 bunch of mint eaves (Save one sprig for garnish)
Ice 


For Tapioca Pearls:
5 cups water
1/2 cup tapioca pearls
2 tablespoons maple syrup


In a medium sauce pan, bring water to a boil.  Add tapioca pearls and stir.  Turn to low heat and continue to cook for 5 minutes.  Strain tapioca pearls and cover with Honey Simple Syrup.  Let cool for at least 15 minutes.  Meanwhile, in a separate pan, bring water, tea and mint leaves to a boil.  Once cooled, stir in lemon juice, honey and vodka.  Adjust sweetness to taste!  Add pre-cooked Tapioca balls to the bottom of a tall glass and pour tea mixture over ice.  Garnish with a sprig of mint. Enjoy!
