We celebrated Christmas this year with this tasty new champagne cocktail creation. It was such a hit, in fact, that our dad had to run out and buy more champagne! And since it is the new year, we thought we'd also offer a healthier, non-alcoholic (although equally delicious) version of it. Happy new year!
Tangerine Ginger Champagne Cocktail
Makes 6
1/2 cup sugar
1/4 cup water
2 teaspoons freshly grated ginger
Rind and juice of 6 tangerines
Champagne
Add sugar, water, ginger and tangerine rind to a saucepan. Bring to a boil until sugar is dissolved. Let cool. Add tangerine juice and stir. Divide mixture between six glasses. Fill each glass with champagne!
Tangerine Ginger Sparkling Mocktail
Makes 1
1/4 teaspoon tangerine zest
1/4 teaspoon fresh ginger
1 tablespoon tangerine juice
1 lime wedge
Sparkling cider
Add tangerine zest, ginger and tangerine juice to a champagne glass and stir. Top off with sparkling cider and a squeeze of fresh lime juice.


I loved this so much! I want one every morning! AND I think I'm going to make these on our "girls weekend" away in Wisconsin! Except, do they have tangerines in Wisconsin in February? Do you think I can smuggle some in my luggage?
