Wine Wednesday: Pomegranate Wine Sangria

Pomegranate Wine Sangria

Makes 8-10 glasses

One 750 ml bottle of Pomegranate Table Wine
1/2 grapefruit (sliced into circles)
1 lemon (sliced into circles)
1 orange (sliced into circles)
1 persimmon (sliced into circles)
4 kumquats (sliced into circles)
½-1 cup dark rum
Seeds of 1 pomegranate
Juice of 2 oranges (Appx. ¾ cup)
Juice of 2 lemon (Appx. ½ cup)
1 cup Star Anise Simple Syrup (see recipe below)
Club soda (to top)

Slice grapefruit, lemon, orange, persimmon and kumquats. Add fruit to a bowl, including the pomegranate seeds. Pour in one 750 ml bottle of pomegranate wine. Next add dark rum and ½ of the Star Anise Simple Syrup (reserve the other half for guests to adjust the sweetness of their individual drinks). Briefly stir mixture and chill for at least 2 hours (overnight is best), to allow for the flavors to fully develop. Serve with a star anise, a little bit of fruit, and a fresh citrus slice in each glass. Just before serving top off each glass with club soda (if not using club soda, reduce amount of simple syrup to taste). Give each glass a stir.
Note: feel free to replace any of the sliced fruit with what's currently in season now like peaches, plums, nectarines, etc...

Star Anise Simple Syrup

½ cup sugar
½ cup water
4-5 star anise pods

Add all ingredients to a small pot and bring to a boil. Reduce heat and stir until sugar disappears. Turn off stove and let the mixture steep and cool for one hour (or overnight, if you make it ahead of time).

  1. GORGEOUS!! I think this would be great with peaches and plums... especially with the star anise. Mmmmmmm!
