Well this mojito is different! Instead of limes, we're using kumquats and Meyer lemons which are currently growing all over the place here in California. They are nicely complimented by the fresh ginger and mint.

Kumquat & Meyer Lemon Mojito
10 mint leaves
2 ounces white rum
1½ ounces freshly squeezed Meyer lemon juice
2 tablespoons sugar
¼ teaspoon freshly grated ginger
Club soda to top off
Slice kumquats into rounds and add to a highball glass. Next add lemon juice, sugar, mint leaves and ginger and muddle ingredients together. If you don’t have a muddler, you can use any flat utensil with a handle, such as a spoon. Next add white rum and stir. Add crushed ice and top off with club soda.
Get crazy, get wild, get crazy, get wild and garnish with a stacked kumquat and mint cocktail skewer!
