Christmas Cocktail #5- Lemon Meringue Pie Drop

Hold on to your santa hats!  This may very well be the most amazingly delicious cocktail we've EVER made!  Believe it or not, IT TASTES JUST LIKE PIE!  And it's so simple!  We took the classic Lemon Drop (vodka, sugar, lemon) and tweaked it ever so slightly.  We replaced the regular vodka with vanilla vodka, and added a gorgeous meringue to float on top!  Brilliant!  So when life hands you lemons...make a cocktail and get Fashionably Bombed!
Highly appropriate lemon-picking attire!

It's a pie and a cocktail all rolled into one!

Lemon Meringue Pie Drop
Makes 1

2 ounces freshly squeezed lemon juice
1½ ounces Vanilla Vodka
1 ounce simple syrup
1/8 teaspoon freshly grated lemon zest
Crushed ice

To a cocktail shaker add all ingredients.  Shake vigorously until a frost forms on the outside of the shaker. Garnish with a homemade meringue floating on top!

Meringue Topper

Makes 6

2 eggs
½ cup sugar
1/8 teaspoon cream of tartar

Separate egg yolks from egg whites. (Put egg yolks aside for another recipe). Beat egg whites on high speed. Add cream of tartar and gradually mix in sugar until dissolved. Once your egg whites form stiff peaks, they are ready. Place a large piece of parchment paper onto a baking sheet and draw out 6 circles (we used round cookie cutters). Make sure the circles will fit your martini glasses. Spoon meringue mixture into a pastry bag with a large round tip (or a ziplock bag with one 1/2 inch corner cut off). Squeeze the meringue mixutre into circular shapes on your parchment paper. Bake at 275 degrees for 30 minutes to one hour. The longer you bake them the browner and crisper they will get.
