Christmas Cocktail #4- Eggnog

Now how could we have a Fashionably Bombed Christmas without eggnog?  It is, afterall, the quintessential Christmas cocktail!  But first watch as we run around the farm chasing chickens and doing our version of "The Chicken Dance"!  Apparently we'll do anything for a laugh...

Makes 2 large cups

2 eggs
4 tablespoons sugar
1¼ cups whole milk
½ cup heavy cream
1 tablespoon bourbon
2 tablespoons cognac
½ vanilla bean, split lengthwise and scraped, seeds reserved
pinch of salt
freshly grated nutmeg

Separate egg yolks and whites. Whip whites with an electric mixer and add 1 tablespoon of the sugar. Set aside. In a separate bowl whip egg yolks and 2 tablespoons of the sugar with a wire whisk. In yet another bowl, lightly whip heavy cream and add remaining 1 tablespoon of the sugar and vanilla bean seeds. To yolk mixture add milk, bourbon, cognac and a pinch of salt. Stir well. Fold egg whites and whipped heavy cream into yolk mixture. Chill for at least an hour. Top each glass with freshly grated nutmeg.
